A lot of European recipes combine nuts and jam, and for a good reason - it's delicious! With just the right amount of jam peeking through the tops, these delicate and buttery nut cookies are a miniature version of Austrian Linzertorte, and hold a special place in cookies tins around the holidays.
You can make these in any shape you like, or you can get creative with the cutouts in the centre of each cookie. We think these taste the best the next day, when the cookies have absorbed some of the moisture and flavour from the jam.
