Many people make carrot cake around Easter, but it's a classic cake that can enjoyed all year long. (Don't get us wrong though, we'll take any reason to make a themed cake!)
It is a delightfully sweet and spicy cake, complimented with a tangy cream cheese frosting, perfect for sharing with a cup of tea.
Lots of recipes claim that using butter does not result in a moist cake, but having always made this cake with butter we have to disagree! You can still be use oil if that's your preference, but we recommend a reduced amount to keep the cake from having an oily taste.
